Beaune is the beating heart of Burgundy's wine country, a town of 20,000 inhabitants that lives by the rhythms of cellars and auctions. Its medieval centre turns around the Hospices de Beaune, the fifteenth-century hospital whose glazed tiles have become the symbol of an entire region. The town fully embraces its identity as the capital of Burgundy wines without seeking to be anything else.

Spring and autumn offer the best conditions for visiting, before the summer rush that clogs restaurants and cellars. Two days are enough to explore the centre on foot, including the Collegiate Church of Notre-Dame and the network of underground caves. Avoid organised tastings by coach from Dijon: they skim the surface. Instead, hire a bike to reach the villages of the Côte de Beaune at your own pace.
