Cancale owes its reputation to a single product: the flat Breton oyster, farmed here for centuries in the bay of Mont-Saint-Michel. The Houle harbour structures the entire town—its tides, its smells, its rhythms. It's a town of fishermen, not a backdrop, and you hear it in the way locals talk about tidal coefficients before they mention the weather.
The best period runs from April to June, before summer crowds turn the quay into a pedestrian bottleneck. Two days is more than enough, driving from Saint-Malo (twenty minutes). Don't buy your oysters in the harborfront restaurants: go straight to the oyster farmers' stalls in the Houle market, where prices are a third of the price and freshness is incomparable.
