Saumur draws its character from the tension between white tuffeau stone, the slow-moving Loire, and an equestrian tradition that has structured the town for centuries. The Cadre Noir, a state dressage school established here since 1814, isn't a living museum: it's a functioning institution open to visitors. The castle dominates the riverbank without overwhelming the town—a rare feat.

Spring and early autumn offer a light across the valley that summer, saturated with tourists, doesn't provide. Two days suffice for an honest tour, three if you venture into the caves of Bouvet-Ladubay or a Saumur-Champigny producer. You'll need a car; local public transport is limited. Skip the restaurants along Quai Mayaud: the setting is fine, the cooking rarely lives up to it.
