Toulouse draws its distinctiveness from a colour: the pink of its Roman brick, omnipresent from the façades of Place du Capitole to the banks of the Garonne. A city of engineers and students, it runs to its own beat, caught between the aerospace industry and a still-living Occitan culture in its markets and concert halls.
Spring and autumn offer the best conditions for exploring the city on foot or by bike via the VélôToulouse network. Budget two full days for the historic centre, Saint-Sernin basilica and the Abattoirs without hurrying. Avoid restaurants immediately around the Capitole: prices are inflated and cooking rarely matches what the Carmes quarter offers just two streets away.
