Jerez de la Frontera - Bodega González Byass (Jerez de la Frontera)
Wikipedia (en) - CC BY-SA

Jerez de la Frontera lives at two rhythms: that of flamenco, born here in the Santiago and San Miguel quarters, and that of the bodegas where sherry has aged for centuries. This is not a town seeking to please tourists—it exists for itself, which makes it all the more interesting to observe. The Real Escuela Andaluza del Arte Ecuestre alone concentrates an equestrian tradition without equal in Europe.

Spring, between March and May, offers the best compromise before Andalusia's dry summer heat. Two days suffice to grasp the essentials, three if you wish to attend an equestrian performance or explore the González Byass bodegas properly. From Seville, the train remains the simplest option. Avoid timing your visit to the Horse Fair unless you've booked well in advance: prices double and accommodation vanishes weeks before.
